Beef with Ginger and Onions

Beef stir-fried with ginger and scallions (green onions) is a definite Chinese stir-fry classic dish.  When the oil is hot in the wok, add the green & white onions.  Shortly after add the ginger slices to enhance the flavor in the wok.  The combination of fresh ginger, scallion, and beef slices, with a light oyster-based sauce and a dose of wok hay (breath of wok – slight “smokiness”) is always inviting and delicious.  Taste the wok!
