Next, Shiitake mushrooms (aka Chinese black mushroom) and yellow onions are cook separately in a savory brown sauce. Everything get scoop into a metal hot pot which is lined with lettuce to avoid sticking to the bottom. The hot pot is put on slow simmer until the tofu absorbs all the flavors of the broth.
