Egg fried rice is the base of all our fried rice dishes. We wash and finely chop the green onions. Lightly beat the eggs with salt and pepper. The wok must be at a high heat, when the oil is hot, and then add the eggs. Stir until they are lightly scrambled but not too dry. Add the rice and stir fry some more. Stir in the soy sauce. And lastly add the peas, carrots, & green onions to bring all the flavors together.
