Fillet Fish Chow Fun

This week, we are featuring Fish Fillet Chow Fun (aka ho fun), a Cantonese dish whose name literally mean “stir-fry the noodles”.  Cooking these wide rice noodles requires sophisticated oil control techniques or you will end up with pasty, broken noodles. The chow funs are quickly stirred fried quickly on super high flame until each piece is evenly cooked. We add in some lightly fried fish fillets which are crispy & golden brown on the outside but soft and moist inside. Lastly, the fish fillets and Chinese bok choy are wet stir-fried together with the chow fun in a light brown sauce.   Have fun trying to capture these slippery morsels with your chop sticks.
