Hainan Chicken with Garlic Rice

Believe it or not we have dishes not in our extensive menu, but it is on our wall.  Hainanese chicken with garlic rice is a dish of Chinese origin, and is most commonly associated with Hainanese, Singaporean and Malaysian cuisines. It is based on the well-known Hainanese dish called Wenchang chicken, due to its roots in Hainan cuisine and its adoption by the Hainanese overseas Chinese population in the Nanyang area.  The chicken is prepared by boiling the entire chicken in a chicken bone master stock.  The master stock enriched with soy sauce, rock sugar, rice wine, and water will create the tender and savory chicken.  The rice is made with chicken stock and infused with garlic to give a wonderful aroma and taste.  This dish is served with 3 dipping sauces:  dark soy sauce, chili sauce, and pounded ginger.
