Salty and savory, Chicken and Salted Fish Fried Rice is so good, it can become addictive! We put the wok on high heat, when the oil is hot, and then add the chicken. We lightly beat the eggs with salt and pepper. Stir until they are lightly scrambled but not too dry. Add the rice, stir fry & mix in the chicken and preserved salted fish (tuna in soybean oil). Stir in the spices. And lastly add the peas, carrots, & green onions to bring all the flavors together. Warning… this fried rice is pungent but so good.
