MaPo Tofu is a famous Szechuan tofu dish. It is a combination of tofu set in a spicy chili thick sauce, fresh mushrooms, and minced pork to create a deep, rich, and spicy fusion. The silken soft tofu is cut up into small squares and then blanches for a couple of minutes. The marinated minced pork goes into the heated wok first. It is stir fried until the minced pork color darkens. Now all the other ingredients get added: mushrooms, stock mixture, chili bean paste, tofu, green onions, and spices. Come and soak in the spicy aroma from MaPo Tofu served on a plate of your choice of white or brown rice. |
