XO Hot Sauce Combo Fried Rice

The wok must be at a high heat, when the oil is hot, and then add the chicken, beef, squid, and shrimp.  We lightly beat the eggs with salt and pepper.  Stir until they are lightly scrambled but not too dry.  Add the rice, stir fry & mix in meats and seafood.  Stir in the XO sauce (spicy).  And lastly add the peas, carrots, & green onions to bring all the flavors together.
