This is a local Hong Kong specialty and the use of the sauce to make a Tai Chi yin and yang symbol. Egg fried rice dish topped with two different types of sauce, a savory shrimp white cream sauce on one half and sliced chicken with a red tomato-based sauce on the other half. This dish is always served at the end of the wedding banquet to symbolize femininity and masculinity. Just before serving, combine both sides to mix shrimp and chicken in a pool of sweet tangy tomato sauce with creamy eggy goodness. Heaven on earth!
